Ever heard of a ‘spelteree?’ Yeah, I hadn’t either, but I can confirm, it’s delicious! 😋 This is a dead easy recipe that packs a lot more flavour than you’d expect. Its creaminess reminds me of a beef stroganoff, but it’s vegan...and tastes more like a curry! A year of intention later, I stop and notice the present moments in a way that’s made me appreciate them more. 🌻 So what’s 2019 going to bring? Fancy something fresh? 💚 Try this super simple taste sensation approved by @perrilyons ✅ For 4 servings: sauté 1 onion, 3 garlic cloves and 1 small courgette (zucchini) with salt and pepper to taste until browned. Throw sautéed veg on top 3 handfuls of kale with 1 apple chopped and 1 small handful of walnuts. 🥗 Drizzle with the tastiest dressing in town: 4 Tbsp olive oil, 2 Tbsp balsamic vinegar, 1 tsp dijon mustard, 1 tsp maple syrup and salt/pepper to taste. 😋 This salad was so good, @perrilyons and I ate the leftovers for dessert. Like, actually. 😂
